This role is a rotational position that will require you to work at site for 20 days, out of camp 10 days. The Sous Chef assists the Executive Chef in leading the culinary team in supporting all aspects of unit food service operations, including the dining room, catering and the lounge. The position is responsible for assisting in all food management processes including the ordering of food and supplies, menu development, recipe consistency and quality assurance. The Sous Chef will assume the responsibilities of the Executive Chef and will lead the culinary team when the Executive Chef is offsite.

  • Assists the Executive Chef and Human Resources in the selection of hourly employees, including resume review and interviewing of culinary candidates.
  • Assists the Executive Chef in ensuring culinary team compliance with all Human Resources policies, programs and procedures.
  • Ensuring all developed training plans are consistency implemented for hourly culinary employees, providing input on the plans as required.
  • Coaches culinary employees as needed and ensures the consistency of performance management and disciplinary actions in conjunction with the Executive Chef.
  • Along with the Executive Chef, provides continuous feedback on performance and assists in providing the appropriate developmental tools to promote the individual growth of culinary employees.
  • In conjunction with the Executive Chef, leads and supervises culinary team employees.
  • Demonstrates and promotes Sodexo’s culture and values
  • Demonstrates a proactive and enthusiastic attitude in striving for and meeting business goals and objectives.
  • Recognizes the importance of and utilizes effective leadership in meeting the business goals of the unit.
  • Assists the Executive Chef and Procurement Management in sourcing products, materials and supplies.
  • Assists the Executive Chef in regularly analyzing the costing/pricing of the dining room, catering, and lounge menus and implementing corrective action plans as required.

Client and Guest Satisfaction

  • Establishes and maintains client satisfaction levels in all food service areas.
  • Ensures that client communications are effective, emphasizing the value of maintaining Sodexo as the service provider of choice.
  • Ensures that all employees demonstrate a high level guest service experience to all guests and clients.
  • Follows the terms and conditions of the client contract.
  • Assists in implementing action plans arising from guest surveys.
  • Provides creative input into rotational, theme night and special event menus.

Program Quality and Standards

  • Assists in the implementation of all Sodexo and regulatory food management programs.
  • In conjunction with the Executive Chef, ensures in the quality of all hot and cold food production, in the dining room, lounge, and in catering.
  • Ensures in the cleanliness and sanitation in all culinary areas.
  • Follows Sodexo’s quality assurance standards by use of inspection reports in a timely and consistent manner.
  • Notifies the Maintenance Manager and Executive Chef should equipment require maintenance.

Health and Safety

  • Performs all tasks according to safe work practices, following SOPs and instructions.
  • Ensures that all required equipment and protective devices are used in the correct manner.
  • Supports the Executive Chef in conveying policies and procedures to employees to familiarize them with Health and Safety responsibilities, safe work procedures, thereby ensuring effective and consistent compliance with all safety policies.
  • Reporting of all incidents/accidents/hazardous conditions immediately to the Health & Safety Manager and assisting in implementing corrective actions.
  • Encourages employees to actively participate in workplace Health and Safety training/education and committees.

Other

  • Additional projects and/or responsibilities as assigned.
