Job Overview:

The Sous Chef is responsible for the execution of all aspects of food production to attract and retain gaming guests while contributing to the success of the Food and Beverage department. The Sous Chef provides fast, friendly, and courteous service to co-workers (internal customers) and guests.

During your tenure, candidates must demonstrate culinary passion, creativity, and guest interaction. The Sous Chef will have the opportunity to create menus in their venues. Success is graded on passion, drive, and creativity. Failure of an item or menu is viewed as a learning opportunity. The Sous Chef reports to the Room Chef.

Duties and Responsibilities
  • Ensure all food products meet standards
  • Check quality of raw and cooked foods
  • Demonstrate new techniques, recipes, and equipment
  • Manage production and staffing schedules
  • Prepare food based on forecasted needs
  • Innovate with current trends
  • Complete food orders and train staff
  • Minimize labor costs while maintaining quality
  • Assist in menu planning and food cost control
  • Complete daily financial reports
  • Maintain a sanitary and safe environment
  • Handle kitchen equipment safely
  • Other duties as assigned
Job Requirements

  • High School diploma or GED required; must complete GED within 6 months if enrolled
  • Associate’s Degree in related field required or equivalent experience in supervisory or gaming roles
  • Successful timed food presentation required
  • Graduate of an accredited culinary school preferred
  • Must pass a job interview and guest service audition
  • Knowledge of kitchen sanitation and equipment; ServSafe Certification or equivalent required
  • Ability to stand, walk, lift up to 50 lbs, and work in hot, humid environments
  • Excellent communication skills
  • Extensive food preparation knowledge
  • Ability to work independently and in a team
  • Flexibility to work irregular hours, including nights, weekends, and holidays
  • Must possess or obtain an Illinois Gaming License

Base Pay:

  • Range: $43,400 - $59,300, depending on experience and skills
  • Benefits include medical, dental, vision, life insurance, FSA, EAP, paid time off, 401K, shift differential, and bonuses
