Responsibilities

JOB SUMMARY: Under the direction of the Executive Chef, assists in planning and directing food preparation across restaurants and banquet facilities. Takes full responsibility in the Executive Chef's absence, managing food production areas and acting as leader when needed.

  • Ensure compliance with Gaming Commission Regulations and company policies.
  • Support the development of Tribal members through mentorship and career guidance.
  • Promote responsible gaming and alcohol service, reporting concerns appropriately.
  • Report any illegal activities or ethics violations to management or the Ethics Hotline.
  • Maintain departmental standards and oversee staff training, coaching, and retention.
  • Monitor food costs, manage scheduling, and ensure adequate staffing levels.
  • Assist in organizing and operating the culinary department within budget and policy guidelines.
  • Maintain sanitation standards per health department codes.
  • Ensure a safe, hazard-free work environment.
  • Communicate daily needs and expectations with staff.
  • Develop staff skills through training and coaching.
  • Stay informed on industry trends and communicate relevant information.
  • Handle customer complaints and promote positive relations.
  • Perform other duties as assigned.

PHYSICAL DEMANDS: Regularly sit, handle, reach, talk, hear, stand, walk, and occasionally lift up to 40 lbs. Must have good vision and maneuver around the property, often standing for long hours.

Qualifications

QUALIFICATIONS: Culinary Arts degree preferred; minimum six years as Executive or Sous Chef in high-volume, high-end operations or equivalent experience.

ADDITIONAL QUALIFICATIONS: Ability to work flexible hours, deliver exceptional guest service, demonstrate enthusiasm, communicate effectively, lead a diverse team, and proficiently use Microsoft Office.

WORK ENVIRONMENT: Exposure to casino-related factors like smoke and noise, with the ability to communicate effectively in English. Environment is hectic, fast-paced, and crowded.

CLOSING: Preference given to Native Americans, especially Seminole Tribe members. Final candidates must pass background checks and obtain gaming licensure. Management reserves the right to revise duties as needed.
