Major Food Group is seeking a Sous Chef to join our team at Carbone!

About Carbone: Carbone is an Italian-American restaurant created by Mario Carbone, Rich Torrisi, and Jeff Zalaznick. It pays homage to the great Italian-American restaurants of mid-20th century New York, combining elegant, comfortable, and unpretentious settings with delicious, well-prepared food. The menu features dishes like Seafood Salad, Linguini Vongole, Lobster Fra Diavola, Chicken Scarpariello, and Veal Parmesan, elevated with contemporary culinary techniques.

Position Overview: We are hiring an experienced Sous Chef with a strong work ethic to uphold the highest standards of cuisine and professionalism.

Responsibilities:
  1. Sourcing, ordering, and receiving the highest quality ingredients
  2. Developing, teaching, and maintaining all recipes and techniques
  3. Organizing a large team and holding each chef accountable for their responsibilities
  4. Overseeing and maintaining a smooth, professional service
  5. Maintaining all kitchen equipment and following up on repairs
  6. Ensuring high standards of cleanliness and organization
  7. Managing scheduling and inventory within budget constraints
Requirements:
  • Minimum 2 years of experience in a management role
  • Minimum 4 years of experience in a high-volume, quality-driven kitchen
  • Culinary diploma or equivalent experience preferred
  • Team-oriented with a positive attitude
  • Strong communication skills
  • Proficiency in Spanish is a plus
