Job summary

Grand Hotel on Mackinac Island is seeking a Sous Chef to lead a high-volume kitchen and deliver exceptional dining experiences. You will collaborate with the culinary team, guide daily operations, and contribute to menu development while ensuring top-notch quality and service.

You will oversee planning with the Executive Chef, handle staffing, and manage inventory and food safety. This role offers competitive compensation and advancement opportunities in a historic, world-class resort

Qualifications

  • College degree or certification in culinary field/hospitality field.
  • Minimum of 2 years of experience in a high-volume kitchen, preferably in a hotel or resort setting.
  • Knowledge of a variety of culinary techniques and cuisines.
  • Strong leadership skills with the ability to motivate and inspire a team.
  • Excellent communication skills, both verbal and written.
  • Ability to manage inventory, including ordering and receiving products.
  • Ability to work in a fast-paced environment and handle multiple tasks simultaneously.
  • Understanding of food safety and sanitation guidelines and regulations.

Responsibilities

  • Communicate daily with the Executive Chef regarding planning, staffing and internal procedures.
  • Complete daily food requisitions and daily specials.
  • Assist in hiring, training, and coaching of the team.
  • Play an integral role in menu development and inventory management.
  • Maintain a clean and organized kitchen and ensure dishes are prepared to perfection.

Overview
