Description

Position: Sous Chef

Job Overview:

Prepare food of consistent quality following recipe cards, production, and portion standards, as verified by servers. Start food items prepared ahead of time, ensuring not to overprepare. Date all food containers and rotate perishables according to Crescent standards, maintaining proper temperatures.

Reports To: Executive Chef

Essential Job Functions:
  • Maintain knowledge of and ensure compliance with all departmental and hotel policies and procedures.
  • Train staff, evaluate performance, resolve issues, communicate effectively, and recommend discipline or termination when necessary.
  • Set daily priorities and assign tasks for production and preparation.
  • Create daily menu specials and seek feedback from the Executive Chef.
  • Review banquet event orders and note any changes.
  • Communicate clearly with staff verbally and in writing.
  • Conduct daily inventory of specified food items.
  • Requisition supplies, ensure proper receipt and storage, and communicate needs with Purchasing and Storeroom staff. Ensure quality of received products.
  • Meet with Steward to review equipment needs, banquet assistance, sanitation, and safety.
  • Ensure staff report on time, document lateness or absences.
  • Stock kitchen work areas with tools, supplies, and equipment to meet demand.
  • Keep recipe cards, production schedules, and plating guides current and posted.
  • Ensure staff follow recipes and yield guides to department standards.
  • Monitor staff performance and rectify deficiencies.
  • Observe guest reactions and coordinate with service staff to ensure satisfaction.
  • Conduct regular walkthroughs to maintain quality and standards.
  • Assist in menu development and execution.
  • Coordinate with catering to meet or exceed guest expectations.
  • Review sales and food costs with the Executive Chef to meet budget goals.
  • Utilize excess items efficiently.
  • Oversee training of new hires and ongoing staff training programs.
  • Maintain hotel policies and standards.
  • Perform other related duties as assigned.
  • Adhere to attendance policies and be available for scheduled work.

  • Proficient in English communication.

  • Ability to transport goods and operate kitchen equipment safely.
