ROCC is looking forward to hiring a professional & talented Sous Chef. Executive Chef, Charles Carroll, is excited to add to his existing Sous Chef team, who oversee 8 kitchen areas that provide service to 5 restaurants and 7 concepts, plus our Banquets & Catering program. Reporting to the Executive Chef, the Sous Chef assists in leading the team in the production of all food needed for Bistro Restaurant. Join the Sous Chef Opening Team for the menu R&D for two new restaurants and 4 concepts currently part of our 38 million dollar renovation. Duties and Responsibilities
Working knowledge of ala carte restaurant (Fry Station, Broiler Station, Sautee Station, Grill Station & Pantry)
Order all food for production for Pool Side Restaurant. As well as menu planning, personnel supervision, costing & execution, ordering, writing prep lists
Act as Chef and overall supervisor of the Bistro kitchen and employee restaurant
Establishes, adheres to and manages the food cost goals for restaurant functions
Actively participates in the training and on-going supervision of all employees involved with the Bistro and Solaris Restaurants food production
Checks inventory of meat & produce
Follow Club’s menu recipes & procedures with all food production, upholding quality standards and adhering to timelines
Oversees process of food product being covered, dated and properly rotated
Ensures closing procedures of the banquet kitchen, with team, to ensure the kitchen is in order before leaving
Enforces professional Club standards of conduct and appearance at all times
Maintains harmony in the kitchen and relationships with the front of the house
Ensures that all storage areas, walk ins and reach ins are neat and cleaned on a daily basis
Ensures that all commissary food areas are stocked, ordered and organized in a professional manner
Qualifications
Minimum of 4 years of proven experience in a similar role at a private club, hotel or upscale dining restaurant
Experience of running a shift without direct supervision
Available to work a flexible full-time schedule, based on Club business. Includes weekends & holidays
Willing to train and learn Club’s recipes and standard operating procedures (SOP’s)
Possess a working knowledge of software such as Microsoft Office and FoodTrak
Possess a valid Texas Food Handlers Certificate
Able to multi-task efficiently while remaining focused on the goal
Able to move and lift up to 25 lbs without assistance
Standing, sitting or walking for extended periods of time and ensuring a professional appearance in a clean uniform are also required
Able to commute to our location with reliable transport
