HCA Florida Blake Hospital in Bradenton, FL is seeking a Sous Chef to lead daily food production for patients, cafeteria, and events. You will supervise cooks, coordinate menu substitutions with Dietitians, and ensure meals meet dietary restrictions while starting and finishing service on time.

You will manage portions, garnishes, safety and sanitation under HACCP guidelines, document logs, meet budget targets, and help educate staff on proper food handling, thawing and reheating.

Qualifications

• Food Protection Manager certification required within 90 days.
• 3 years of experience in a food service/culinary role.
• No travel requirements.

Responsibilities

• Inspect patient trays and cafeteria for attractiveness, palatability and temp.
• Meet budget expectations and manage food and supply controls.
• Educate staff on HACCP guidelines for handling, thawing, holding and reheating.

Job Summary and Qualifications

• You will make substitutions and changes to menus as needed.
• You will work with Dietitians to develop quality meals within the constraints of special dietary restrictions.
• You will supervise cooks and oversee the preparation, portioning, garnishing, and storage of food.
• You will provide leadership support to the Executive Chef in the management of food production for patients, cafeteria and special functions.
• You will prepare hot and cold food as needed and sets up steam table, serving line, station and equipment for use in meal services to include catering, cafeteria and doctor’s lounge, ensuring that meal services start and end on time.
• You will maintain and administer standards for food production and handling, cooking, sanitation, safety, cash control and employee hygiene in compliance with appropriate laws and regulations and policies and procedures.
• You will document receiving log and production logs daily. Assists with maintaining HACCP standards in hot/cold food production areas.
• You will inspect patient trays, physicians lounge, and cafeteria for attractiveness, palatability, and temperature of foods. Ensures organized and sanitized areas according to HACCP guidelines.
• You will meet budget expectations; and manage food and supply controls through purchasing, proper storage, preparation and delivery of food.
• You will assist in the education, and maintains staff responsibility in HACCP guidelines in food handling, thawing, holding and re-heating of food, covers, labels and dates items and maintains techniques to avoid food contamination and spoilage
