Job summary

Abilene Country Club is seeking a dependable Sous Chef to lead daily culinary operations and help deliver an exceptional dining experience for members and guests in Abilene, Texas. The ideal candidate will be organized, safety-minded, team-focused and experienced in a fast-paced scratch kitchen.

The role supports the Executive Chef, ensures quality and portion control, and maintains food safety and sanitation standards while contributing to menu development and event support.

Qualifications

Responsibilities

  • Prepare menu items according to established recipes, quality standards, portion requirements, and production schedules.
  • Assume responsibility for assigned menu items and kitchen functions in the absence of the immediate supervisor.
  • Review menus and daily prep sheets with supervisors; organize work areas to support efficient kitchen operations.
  • Check production needs against inventory and help plan backup items as needed.
  • Inspect work areas, report problems or discrepancies, and communicate equipment maintenance concerns promptly.
  • Assist with forecasting production quantities, completing production and event records, and supporting monthly inventory.
  • Verify the quantity and quality of incoming products and ensure proper storage, rotation, and labeling.
  • Operate kitchen equipment properly and use efficient startup and shutdown procedures.
  • Assist with research, development, and testing of new recipes, menus, and special meals.
  • Attend daily production meetings and provide input on menus, production needs, and service execution.
  • Maintain positive employee relations through professionalism, teamwork, attention to detail, and compliance with standards.
  • Quality-test finished products for taste, texture, appearance, and temperature before service.
  • Ensure food is attractively garnished, appropriately displayed, delivered on time, and not held beyond established holding time frames.
  • Anticipate service needs with a sense of urgency and communicate member or guest feedback to the supervisor and/or Executive Chef.

Position Summary

The Sous Chef is responsible for supporting the Executive Chef and kitchen leadership team in the preparation, production, and presentation of high-quality food. This role assists with daily kitchen operations, maintains consistent standards for quality and portion control, and helps ensure all food safety, sanitation, and workplace safety requirements are met.

Essential Duties and Responsibilities

Food Safety and Sanitation and Workplace Safety
  • Follow proper food handling, safety, and sanitation standards at all times.
  • Maintain kitchen cleanliness and sanitation during operation and assist with scheduled cleanup duties.
  • Maintain excellent personal hygiene, including proper care of uniforms, shoes, head coverings, and facial coverings as required.
  • Demonstrate safe work practices, set a positive example for other employees, and report accidents or injuries immediately.
  • Know the location and proper use of fire extinguishers, Ansul system pull stations, and other emergency equipment.
  • Help maintain kitchen security when a supervisor is not present.
Qualifications and Skills
  • Knowledge of proper cooking times, temperatures, food preparation procedures, and kitchen techniques.
  • Understanding of basic sanitation and safety requirements for food service operations.
  • Strong communication, organization, teamwork, and problem-solving skills.
  • Ability to organize prep materials and work efficiently to maximize freshness and productivity.
  • Ability to use the POS system for timecard clock-in procedures and food delivery system.
  • Ability to perform other duties as assigned.
Schedule Requirements

As a full-time position, this role requires a varied and flexible schedule, including evenings, weekends, holidays, and periods of increased business demand based on Abilene Country Club’s operating schedule.

Certification

Must obtain and maintain a ServSafe certification as required by the Texas Health Department.

Physical Requirements
  • Ability to stand and walk for extended periods during scheduled shifts.
  • Ability to lift, carry, push, and pull items commonly used in a commercial kitchen.
  • Ability to work in hot, cold, wet, and fast-paced kitchen conditions.
  • Ability to safely operate standard commercial kitchen equipment.
