Summary:

The cook prepares, seasons, and cooks food for patients, staff, and visitors according to established recipes and menus. Oversees the work of Culinary Assistants engaged in food production activities. Uses menus and work orders to determine food types and quantities, meets meal schedules, and suggests menu or recipe changes for efficient use of resources. Tests prepared food for quality.

Responsibilities:
  • Review menus and production schedules to determine food quantities and plan cooking schedules.
  • Measure, weigh, and combine ingredients following recipes for hot and cold foods.
  • Prepare menu items timely, including those requiring advanced preparation.
  • Monitor food consumption and adjust production to prevent shortages or surpluses.
  • Supervise Culinary Assistants in meal preparation, ensuring standards are met.
  • Inspect storage areas, ensure proper food storage, and maintain temperature logs.
  • Maintain cleanliness and sanitation of equipment and work areas, and report maintenance needs.
  • Manage food inventories and requisitions.
  • Assist in duties of Culinary Assistant as needed.
  • Support the Sous Chef and foster positive relationships within the team.
  • Maintain confidentiality of patient and hospital information.
  • Adhere to the hospital's Mission, Vision, and Values.
  • Ensure safety in job performance, report hazards, and follow safety protocols.
Qualifications:

High school diploma or equivalent required. 2-3 years of food production experience in an institutional setting preferred.

Working Conditions:

Work occurs in kitchen or other areas with generally comfortable conditions, with some exposure to heat, noise, and hazards such as burns or chemical exposure depending on the area.
