Job summary

Dexterra Group is seeking a Pastry Cook to support bakery production for a high-volume operation, serving up to 1000 guests daily and scaling to 4,000+ guests as operations grow. The role emphasizes product consistency, safety, and meeting quality standards in a fast-paced environment.

The ideal candidate will have 4+ years of pastry experience, ability to supervise night shifts, and a commitment to cleanliness and food safety.

Qualifications

• Minimum 4 years of professional Pastry experience in a hotel, institutional, remote lodging, or similar high‑volume environment.
• Proven experience preparing baked goods for guest volumes of 1000 to 1500.
• Valid Food Handler Card through an ANSI-accredited Provider.

Responsibilities

• Full responsibility for daily bakery and pastry production, including bread, desserts, and baked goods prepared both par baked and from scratch ingredients.
• Preparing and baking goods from scratch in accordance with approved recipes and menu.
• Supervising night‑shift employees, providing mentorship, guidance, and on‑the‑job training.
• Creating and following bakery and dessert menus to ensure quality, consistency, and production efficiency.
• Restocking pastry and bakery shelves to maintain a sufficient, fresh, and visually appealing supply of baked goods.
• Ensuring baked goods meet client quality standards and contractual requirements.
• Supporting special dietary needs, including allergen‑aware and modified recipes as required.
• Identifying areas for operational improvement within the bakery and overall food service operation.
• Maintaining cleanliness through regular cleaning, washing, and sanitizing of equipment and work areas.
