Job summary

Dexterra Group is seeking a Pastry Cook to support high-volume bakery operations in a remote facility within the United States. The role will service thousands of guests daily as the operation scales, managing production of bread, desserts, and pastries from scratch and par-baked items to ensure quality and consistency.

This safety-sensitive position requires adherence to Food Safe Handlers, HACCP, and PCHF principles, with collaboration across culinary leadership to optimize menus, accommodate

Qualifications

• Culinary/pastry degree or certification is preferred but not required.
• Valid Food Handler Card through an ASNI-accredited Provider.
• Minimum 4 years of professional Pastry experience in a hotel, institutional, remote lodging, or similar high‑volume environment.
• Proven experience preparing baked goods for guest volumes of 1000 to 1500.
• Physically able to stand for extended periods and lift to 35 pounds.
• Strong attention to detail, organization, and cleanliness.

Responsibilities

• Oversee daily bakery and pastry production including bread, desserts, and baked goods.
• Prepare and bake from scratch using approved recipes and menus.
• Create and follow bakery menus to ensure quality and efficiency.
• Restock shelves to maintain fresh, appealing baked goods.
• Ensure products meet quality standards and contractual requirements.
• Support allergen-aware and modified recipes as required.
• Identify operational improvements in bakery and food service.
• Maintain HACCP and safety compliance and clean equipment.
• Monitor rotation, labeling and storage to ensure freshness.
• Collaborate with culinary leadership to align output with service volumes.
