Marcus Hotels & Resorts seeks a Senior Director, Corporate Executive Chef to lead culinary teams across restaurants, banquets, and catering. This hands-on leader will set quality standards, develop menus, and drive profitability while fostering a people-first culture and professional growth.

The role is based in Milwaukee with regular travel to properties, reporting to the VP of Food & Beverage. Strong financial acumen and senior leadership experience are essential.

Qualifications

• Minimum 10 years as Executive Chef or similar role.
• Experience leading multi-unit hotel/resort culinary operations.
• Strong financial acumen and P&L understanding.
• Proven leadership, communication, and cross-functional collaboration.
• Ability to travel and thrive in a fast-paced environment.

Responsibilities

• Ensure consistency of food quality and presentation per standards.
• Create SOPs for culinary operations across divisions.
• Develop menus with F&B teams to maximize sales and profit.
• Lead local culinary teams and update menus for seasonality.
• Provide budgeting guidelines and cost-structure improvements.
• Establish procurement guidelines to meet quality/profit targets.
• Develop and enforce health/sanitation standards across units.
• Visit locations for routine inspections and ops assessment.
• Source, train culinary staff and build talent pipeline.
• Manage vendor relationships with procurement leadership.
• Assist with kitchen layouts and equipment specs.
• Produce reports on status, finances, and projects.
• Drive culinary ideation aligned with trends and margins.
• Collaborate with marketing/sales for promotions.
