Job summary

Marcus Hotels & Resorts seeks a hands-on Senior Director, Corporate Executive Chef to lead culinary operations across restaurants, banquets, and catering. This role drives innovation, guest satisfaction, and profitability while promoting a people-first culture. Based in Milwaukee with regular travel to properties nationwide.

The ideal leader combines culinary creativity with strategic oversight and strong financial acumen to grow a multi-unit F&B platform and elevate the Marcus brand.

Qualifications

• Minimum 10 years’ experience as Executive Chef or similar leadership role in culinary operations.
• Experience leading multi-unit hotel/resort culinary teams, upscale and high-volume concepts.
• Strong leadership, strategic direction, and on-site supervision capabilities.
• Creative culinary skills with ability to design menus that drive satisfaction and profit.
• Financial acumen with understanding of P&L, forecasts, and cost control.

Responsibilities

• Ensure consistency of food quality and presentation across all outlets and events.
• Create SOPs for culinary operations from purchasing to line execution.
• Collaborate with corporate and property F&B teams to develop menus that maximize sales and margins.
• Lead local culinary teams with regular menu updates aligned to market and brand standards.
• Develop budgets and improve cost structures by optimizing staffing and processes.
• Establish procurement guidelines to meet quality and profit targets.
• Lead health and sanitation standards across the organization.
• Travel to properties for regular inspections and quality assurance.
• Partner with HR to source, train, and develop culinary talent; plan succession.
