Job summary

Citizen Cider, a hard cider producer in Burlington, Vermont, seeks a Lead Cellar Operator to lead hands-on production from pressing to packaging, ensuring quality, safety, and efficiency.

You will oversee fermentation, blending, and cellar operations, maintain accurate records, and train staff while keeping facilities clean and organized. The role involves close collaboration with co-packing partners and production teams on the floor.

Qualifications

• 3–5 years of experience in beverage production, cider making, brewing, or related field.
• Hands-on fermentation and cellar operations experience.
• Strong sanitation and food-safety practices.
• Experience with blending and packaging preferred.
• Ability to operate and troubleshoot production equipment.
• Strong attention to detail and commitment to product quality.
• Strong communication and leadership skills.
• Ability to work in physically demanding production environment.

Responsibilities

• Oversee and perform day-to-day cider production activities.
• Manage apple receiving and pressing.
• Oversee juice transfers, fermentation, nutrient additions, and monitoring.
• Monitor fermentation progress and adjust as needed.
• Maintain production records, batch information, and cellar logs.
• Ensure production schedules are met while maintaining quality.
• Manage cellar operations including transfers, filtration, carbonation, stabilization, and blending.
• Assist with recipe execution and maintain consistency across batches.
• Maintain clean, organized, and efficient cellar and production areas.
• Conduct routine quality checks and monitor flavor, aroma, appearance, and other quality characteristics.
• Follow sanitation and food-safety procedures.
• Ensure equipment and production areas are cleaned and maintained.
• Provide hands-on leadership to production staff and train employees.
• Assist with production scheduling and staffing; assign daily tasks.
• Lead by example and maintain safety-focused environment.
• Operate and oversee equipment like tanks, pumps, hoses, filtration, packaging.
• Perform routine equipment checks and communicate maintenance needs.
