Leprino Foods Company - Cheese Vat Operator

Leprino Foods Company, a global leader in the dairy food and ingredient industry, is seeking a Cheese Vat Operator to join our team in Roswell, NM. We are the world's largest supplier of mozzarella cheese and a major provider of premium dairy nutrition ingredients, serving a diverse global customer base including leading food companies, restaurant chains, and distributors.

Role Overview: The Vat Operator is responsible for pasteurizing milk, operating vat equipment, adding the correct amount of Rennet, and monitoring the cheese-making process according to customer specifications and recipes. The role also involves maintaining a clean environment and adhering to GMPs, SOPs, Critical Control Points, Food Safety, and USDA regulations.

Compensation & Benefits: Starting wages range from $21.68 to $23.41 per hour, with a night shift premium of $1.25 per hour for hours between 6 PM and 6 AM. Key Responsibilities:
  • Inspect and adjust control panels, monitors, and charts to ensure proper milk temperatures and flow rates.
  • Transfer products appropriately between vats and departments.
  • Input and monitor pH and temperature levels into computer systems.
  • Perform legal pasteurization procedures and maintain records.
  • Follow recipes for cheese production, adjusting ingredient levels as specified.
  • Change pipes and elbows for CIP processes, ensuring proper connections.
  • Clean and sanitize equipment according to procedures, maintaining good housekeeping.
  • Follow GMPs and safety protocols consistently.
  • Communicate effectively with supervisors and team members across departments.
  • Perform sampling and testing for pH levels regularly.
  • Record data accurately and perform CIP duties with proper chemical dosages.
Qualifications:
  • Ability to perform job functions safely and effectively.
  • Minimum age of 18 years.
  • Availability to work a flexible schedule including weekends, holidays, and overtime in a 24/7 operation.
  • Strong attention to detail and record-keeping skills.
  • Good communication skills in English, with basic math proficiency.
  • Ability to interpret data, manage time effectively, and work independently.
  • Physical ability to lift up to 50 pounds, stand, walk, climb ladders, and perform physical tasks throughout shifts.
