Job summary

Pacific Catch is seeking a Director of Purchasing to own purchasing, inventory, and cost-management systems for sixteen restaurants. This hands-on, systems-minded leader translates culinary specs into disciplined purchasing, accurate costing, and reliable inventory controls.

You will own Restaurant365 data, vendor master, recipes, and transition to PO/receiving, while working with culinary leadership to drive cost efficiency.

Qualifications

• Five or more years in restaurant purchasing or supply chain, multi-unit.
• Experience building item masters, recipes and theoretical costing in Restaurant365 or similar.
• Experience implementing purchase order and receiving processes in a restaurant environment.
• Track record of negotiating and consolidating vendor programs.
• Full-service restaurant experience preferred; seafood experience is useful.
• Ability to travel regularly to California.

Responsibilities

• Own the vendor master and item master in Restaurant365; manage naming conventions and accuracy across all sixteen restaurants.
• Map invoices to items and GL accounts to ensure item-level costing accuracy.
• Develop, implement, and maintain theoretical vs. actual usage reporting; own exception review.
• Design and roll out purchase orders and formal receiving processes; coordinate with field leadership.
• Own order guides and item availability by restaurant.
• Negotiate vendor contracts and monitor pricing, rebates and service standards.
• Maintain supplier scorecards including fill rate and delivery performance.
• Track waste, spoilage and inventory controls; lead cost-management initiatives.
