Job Description

The Remote Cook is responsible for the daily preparation, production, stocking, and presentation of a variety of foods, including breakfast, entrees/soups, salads, salad bar accompaniments, pantry production, maintaining serving line levels, cleaning and sanitizing preparation areas and equipment, and baking. All duties are to be performed in accordance with NMS’ mission, vision, and values as well as departmental policies, practices, and procedures.

Responsibilities

  • Perform all main line food production duties as assigned per shift
  • Review daily needs with supervisors, complete production sheets, review maintenance reports, and verify supply needs
  • Assist with menu and recipe development
  • Monitor and replenish salad bar and pantry items using proper rotation procedures
  • Cook various foods such as breakfast, lunch, dinner, coffee, drinks, sandwiches, salads, and more
  • Prepare, present, and restock food items like vegetables, salads, meats, cheeses, and dressings
  • Use various food preparation procedures and equipment, including cutting instruments
  • Assist in food production or handling special duties as needed
  • Serve in the service line as necessary
  • Handle special food prep or cleaning projects
  • Rotate food items appropriately
  • Clean and sanitize preparation areas and equipment
  • Ensure serving lines and areas are properly stocked and maintained
  • Manage garbage removal, table setup, and breakdown
  • Communicate with supervisors regarding meal items and backups
  • Complete menu display announcements as directed
  • Organize freight regularly
  • Supervise staff or lead personnel, overseeing 30+ employees in food service and janitorial tasks
  • Maintain quality control and sanitation standards
  • Assist in training food service personnel
  • Ensure proper rotation of produce and dairy products
  • Maintain equipment and storage areas following sanitation and safety protocols
  • Report safety or sanitation issues to supervisors

Qualifications

  • High school diploma or GED
  • Minimum five years of related restaurant cooking experience with knowledge of high-volume food production and supervisory techniques
  • Ability to instruct and train others and handle multiple tasks
  • Obtain Alaska Food Workers Card and/or ServSafe Certification upon hire
  • Pass pre-employment requirements including background check and drug test
  • Ability to work as part of a team and make decisions independently
  • Stand for 12 hours per shift
  • Live in dormitory-style accommodations and meet cleanliness standards
  • Speak, understand, read, and write English
  • Adhere to safety guidelines and regulations

Working Conditions and Physical Requirements

Indoor/outdoor environment, frequently exposed to arctic conditions. Moderate to loud noise levels. Must be able to stand, walk, climb, push, pull, use hands, stoop, kneel, and crouch. Ability to lift/move up to 50 lbs. Travel may be required, including passing TSA security checkpoints with valid ID.
