As a Raw Bar/Lead Line Cook/Jr Sous, you will be responsible for producing high-quality menu items under the chef's direction. This role combines the duties of a traditional line cook with the specialized skills required for handling and presenting raw seafood items.

Key responsibilities include:
  1. Managing, handling and preparing all raw bar items and ingredients
  2. Experienced knife skills and fish butchering
  3. Controlling food production and managing kitchen inventory
  4. Ordering, budgeting and receiving supplies
  5. Invoice processing
  6. Maintaining a clean kitchen and adhering to all sanitation standards
  7. Following proper methods for preparing and cooking food
  8. Maintaining up-to-date knowledge of the menu (including preparation, seasoning, ingredients, and plate presentation)
  9. Preparing, cooking, and seasoning all food according to recipes

In addition, you will train, mentor, and lead all line staff to meet service and safety standards. A high level of attention to detail and food safety knowledge are essential in this fast-paced environment.

Qualifications:
  • High school diploma or GED
  • Familiarity with all phases of food preparation, especially maintaining cleanliness and sanitation of the raw bar area and proper storage of seafood
  • Ability to meet the physical demands of the position
  • Teamwork and good interpersonal skills
  • Upholding company standards related to appearance and hygiene
  • At least one year of prior kitchen experience
Physical, Mental, and Environmental Demands:
  • Mobility and dexterity to move objects up to 100 lbs
  • Manual dexterity for using kitchen utensils and handling food
  • Tolerance to industry-standard chemicals and hot environments
  • Ability to work at a fast pace and respond to cues
