Job summary

Tamarack Foods in Americus, Georgia, is seeking a Quality Assurance Technician to monitor and document GMPs, HACCP, Finished Product Specifications, Process Sheets and SOPs across the production floor.

In this role you will work through cold and warm areas, perform preoperative inspections, monitoring and record-keeping, product sampling and equipment calibration to ensure safety and quality of our battered and fried protein products.

Qualifications

  • Good communication skills, must read and write English, math and computer skills.
  • High School diploma or equivalent.

Responsibilities

  • Preoperative inspections of equipment and facility
  • Monitoring and record keeping of inspection
  • ATP swabs
  • Operational inspections—facility housekeeping
  • Monitor employee practices
  • Ensure cleanliness of equipment, tools and utensils
  • Monitoring and record keeping of inspection
  • Boot foamers inspection
  • Response to foreign material incidents
  • Product hold/segregation/release
  • Product sampling/microbiological testing
  • Thermometers calibration
  • Scales calibration
  • Internal plant audits
  • Ensure incoming raw chicken meets specifications during cutting
  • Maintain safe handling temperatures during cutting and marinating
  • Ensure meats are cooked to required temps in fry line
  • Control product sizing, defects, batter pickup and flavor/odor
  • Package cooling/freezing at required times and temps
  • Verify metal detector checks before packaging
  • Execute other duties as assigned in all areas

Job description

General Responsibilities

The Quality Assurance Tech is responsible for monitoring and documenting that the GMP's, HACCP, Finished product Specification, Process Sheets and/or SOP's are followed during process to achieve the level of quality we expect for our products. Parts of our production facility are cold (under 50 degrees) and some are warm due to the cooking operations. In these environments, your major duties are listed below.

Cutting room

Inspection is performed to make sure that all incoming raw chicken breasts and dark meat are received in good condition and meet the raw material specifications for condition, temperature, bones, skin, veins and hard cartilage connective tissue.

Ensure all refrigerated meat and poultry raw materials are handled in a safe manner and that required temperatures of product and room are maintained during the cutting and marinating process.

Fry Line

Ensure that all previously breaded, battered and baked meat and poultry products are cooked and/or cut at the required times and temperatures to achieve the minimum internal temperature/specification requirements.

Ensure the control of the physical aspects of the product such as sizing, uniformity, defects, batter pickup, flavor and odor. One or two pounds are weighed from each sample and product is graded as required for selected customer with results recorded in Processing and Finished Product grade sheet.

Packaging Room

Ensure the documented control of the cooling/freezing and packaging process so that previously Fully Cooked Products are cooled/frozen at the required times and temperatures to inhibit the growth of microorganism and preserve the product prior to packaging.

Ensure the elements pertaining to the monitoring and verification of metal detectors are in place so that all finished products are packaged in a safe manner to protect the consumer from potentially harmful metal objects.

Execute other duties as assigned in all areas.
