Job summary

Management & Training Corporation at Wilkinson County Correctional Facility in Woodville, MS is seeking a Food Service Supervisor. You will oversee line staff, supervise residents, and ensure a clean, safe kitchen and proper meal preparation per menu plans.

Responsibilities

• Oversee cleaning and sanitizing of all food preparation equipment; keep in safe operable condition.
• Submit work orders and purchase requests to ensure safe functioning equipment.
• Maintain orderly, safe, and sanitary kitchen and work areas at all times.
• Count and control all kitchen tools; provide accurate counts at shift start/end.
• Supervise residents in meal preparation and service.
• Direct residents in cleaning kitchen/dining areas; mop and scrub floors.
• Ensure accurate counts for residents assigned to the kitchen.
• Perform security tasks including pat-downs and strip searches as required.
• Assist in inventory management of food items, supplies and equipment.
• Ensure items are pulled and ready for next meal preparation.
• Monitor food production to meet quantity and quality expectations.

Position Summary

Reports to the food service manager. Directly supervises, the line supervisors, and residents assigned to the food service department. Responsible for maintaining a clean, safe and sanitary kitchen area, to include food preparation areas, tools and equipment, and assisting in the service and preparation of facility meals based on pre-planned menus, in compliance with Management & Training Corporation (MTC) and Mississippi Department of Corrections (MDOC) directives.

Essential Functions

1. 1. Oversee the cleaning and sanitizing of all food preparation equipment and ensure that it is kept in safe and operable condition.
2. 2. Submit work orders and purchase requests as needed to ensure safe functioning equipment is available at all times.
3. 3. Maintain kitchen equipment in orderly workable condition and ensure work area is safe, clean and sanitary at all times.
4. 4. Ensure the count and control of all kitchen tools. Provide an accurate count of all control items at the beginning and end of each shift.
5. 5. Supervise residents in the preparation of meals required.
6. 6. Direct and supervise residents in the cleaning of the kitchen and dining area; mop, scrub, refinish and spot clean kitchen floors.
7. 7. Ensure that counts are performed accurately for all residents assigned to the kitchen.
8. 8. Perform security functions including “pat” and “strip” searches, by squatting and bending to perform such functions.
9. 9. Assist the food service manager in maintaining inventory of food items, supplies and equipment.
10. 10. Ensure needed items are pulled and ready for the next meal preparation.
11. 11. Monitor food production to ensure quantity and quality expectations are met.

It is expected that the incumbent shall perform other duties as assigned within his/her capabilities as determined by management.

Education and Experience Requirements

• - High school diploma or GED and one (1) year full-time, wage-earning experience in the food service industry or eighteen (18) months full-time, wage-earning correctional custody or law enforcement experience required.
• - Prior supervisory experience preferred.
• - Must obtain and maintain required certifications for food service in the state of Mississippi.
• - Valid driver’s license in the state of Mississippi with an acceptable driving record required, unless waived by management.
