Job summary

Iacofano Group is seeking a Production Chef to lead daily food preparation for high‑quality catering, including private aviation dining. You will own production planning, recipe consistency, food safety, and cost control, reporting to the General Manager.

The role requires 5+ years in culinary leadership with HACCP experience, strong organizational skills, and the ability to manage a kitchen team under deadline pressure. Nights, weekends, and holidays may be required.

Qualifications

• 5+ years of culinary experience in production, catering, or high-volume kitchen leadership.
• Prior supervisory experience leading a kitchen team.
• HACCP knowledge and ServSafe Manager certification (or ability to obtain).
• Experience with inventory and purchasing systems such as MarketMan.
• Strong organization, communication, and time management skills.
• Ability to work under deadline pressure with attention to detail.
• Flexibility to work nights, weekends, and holidays.
• Experience in airline, private aviation, or high-end catering preferred.

Responsibilities

• Build daily and weekly production plans from confirmed orders and forecasts.
• Maintain standardized recipes, portioning, plating, and packaging for consistent quality.
• Prepare and pack aviation orders to client specifications, including dietary/allergen needs.
• Follow HACCP procedures, temperature controls, allergen handling, and sanitation schedules.
• Manage yield, waste, and portion control to keep labor plus food cost at or below 60% of revenue.
• Manage purchasing, receiving, and inventory in MarketMan with accurate records.
• Direct production staff, assign tasks by station, and optimize labor efficiency.
• Hire, train, and develop production cooks and prep staff with documented training.
• Enforce safe work practices and maintain a clean, organized kitchen.
• Coordinate with Executive Chefs, AGMs, and GMs to meet client needs and timelines.
• Report production, cost, quality, and safety results to the Vice President of Operations.
