Qualifikationen

• 5+ years of culinary leadership in production or high-volume kitchens.
• Supervisory experience leading a kitchen team.
• Knowledge of HACCP and food safety regulations; ServSafe Manager certification or ability to obtain it.
• Experience with inventory and purchasing systems such as MarketMan.
• Strong organization, communication, and time management.

Aufgaben

• Production planning: build daily and weekly plans from orders and forecasts.
• Quality and consistency: maintain standardized recipes and portioning.
• Private aviation dining: plan and pack orders to client specs, including dietary needs.
• Food safety and HACCP: enforce HACCP procedures and sanitation schedules.
• Food cost control: manage yield and waste to keep labor+food cost at 60% of revenue.
• Purchasing and inventory: manage ordering, receiving, and MarketMan entries.
• Labor and scheduling: direct production staff and optimize labor efficiency.
• Team leadership: hire, train, and develop cooks and prep staff.
• Safety and facility: enforce safe practices and maintain a clean kitchen.
• Collaboration: coordinate with Executive Chefs and GMs to meet client needs.
• Reporting: communicate production, cost, quality, and safety results to VP of Operations.
