This is an exciting opportunity with an innovative food and nutritional products company. You will lead groundbreaking work in developing novel functional and shelf stable beverages with health benefits. Your overall roles and responsibilities will include:

• Designing and leading novel R&D and innovation focused delivering health benefits in shelf stable beverages, for both low acid and high acid category.
• Applying microbiology expertise to deliver probiotic benefits in non-refrigerated beverage systems.
• Leading process and analytical development efforts related to shelf stable beverage manufacturing with novel delivery of probiotics.
• Collaborating with cross-functional R&D teams on the development and commercialization of the functional shelf stable beverages that deliver claimable health benefits.
• This is a hands-on position with minimal supervision.

Desired Skills & Experience

• Ph.D. in Microbiology, Bacteriology, Biochemistry or related life science field.
• Deep understanding of microbiology and bacterial physiology, especially as applied to healthy microbes used in food and beverage applications.
• Hands-on experience developing beverages or functional foods containing encapsulated or viable bacterial cultures.
• Expertise in microencapsulation technologies and novel delivery of bioactive species in human digestive systems.
• Familiarity with stability testing, viability assays, and bioavailability evaluation in functional beverages.
• Strong track record of product innovation, with patents or publications in probiotics, fermented foods and other health oriented functional beverages.
