Essential Duties & Responsibilities
- Maintain and follow department operating procedures; complete daily temperature logs, cleaning logs, line check sheets, and food waste sheets.
- Ensure compliance with all food-handling and sanitation regulations.
- Perform food preparation for fruits, vegetables, meats, poultry, fish, etc. used in restaurants and banquets.
- Provide prep work to support all restaurants; produce food according to recipe cards and written standards.
- Support Buffet and Banquet operations; execute prep work based on production lists and banquet BEOs with forecasted business levels.
- Work Pantry and/or Dessert Station in a la carte and buffet formats.
- Execute food orders according to guest preferences in a timely manner while handling multiple orders.
- Prepare all food items per recipe guidelines, tasting and adjusting for flavor with supervisor/chefs.
- Control recipes by weighing and measuring designated ingredients.
- Monitor supply levels of food, paper goods, and small wares; replenish as necessary.
- Monitor equipment operation, perform preventative maintenance, troubleshoot breakdowns, maintain supplies, and call for repairs as necessary.
- Assist with stocking food and supply inventory, requisitioning supplies, verifying receipt, and storing.
- Maintain appropriate levels of dishes and utensils; keep dishware clean and sanitary at all times.
- Maintain a safe, secure, and healthy work environment by cleaning work areas, food storage areas, equipment and utensils; manage garbage and sanitation procedures in compliance with regulations.
- Follow Ecosure or similar food safety and sanitation program standards.
- Maintain proper cleaning schedules on equipment; operate, troubleshoot, and perform preventive maintenance; arrange repairs as needed.
- Assist and support operations at the request of the Sous Chef, Executive Chef, or property leadership.
- At the end of the shift, check out with a culinary leader.
Basic Qualifications & Skills
- High school diploma or equivalent experience.
- Minimum one year of cook experience in a similar environment.
- Strong knowledge of food preparation and sanitation requirements to ensure a clean food preparation environment.
- Ability to work with Point of Sale and Kitchen Display Systems.
- Flexible scheduling availability, including nights, weekends, and holidays.
- Ability to obtain local or state food handling permits and ServSafe certification as required.
- Successful completion of criminal background check and drug screen.
