Job description

The Prep Cook is responsible for preparing all food items based on standardized recipes for Henrietta's Table, Room Service, Employee Cafeteria, and Banquets, while maintaining high standards to produce appealing and appetizing products. He/she ensures cleanliness, sanitation, and safety in the kitchen and work areas, minimizes waste, and maximizes cost efficiency. The Prep Cook also prepares cold foods, slices shellfish and meats, and brews coffee or tea.

Responsibilities:

  • Provide friendly, service-oriented interactions with guests and colleagues
  • Maintain attendance according to hotel standards
  • Uphold high standards of personal appearance and grooming
  • Follow all hotel standards, regulations, and safety procedures
  • Meet certification requirements (e.g., Food Handlers Safety)
  • Maintain knowledge of menus and preparation standards
  • Keep storage areas clean and organized
  • Prepare food and stations before opening to ensure prompt service
  • Display buffet food items per standards
  • Maintain kitchen line during service hours, preparing food efficiently and to standard
  • Prepare food for Banquets as per event orders
  • Assist with food prep for the Associate Cafeteria
  • Follow standard recipes and prepare specials under supervision
  • Break down buffets and kitchen stations at the end of service
  • Work banquet stations as scheduled
  • Know fire safety equipment location and operation
  • Practice safe work habits to prevent injury
  • Familiarize with hotel policies, house rules, and emergency procedures
  • Use Production Charts as required
  • Maintain courteous and helpful attitude at all times
  • Operate and maintain kitchen equipment properly
  • Follow 'Clean As You Go' policy
  • Assist with food storage and rotation
  • Manage keys responsibly under supervision
  • Attend meetings as required
  • Perform additional duties as assigned
  • Ensure proper food storage to prevent spoilage
