Job summary

The Pit Master at Horseshoe Bay Sporting Club will own the barbecue program end to end, building two pit operations—our club program and a new destination spot at Horseshoe Bay Resort—from the ground up with the founder's creative direction.

This is a build-from-zero, leadership role with a working pit, full control of design, meat sourcing, menu, standards, and identity, supported by a private club and an intimate resort setting in Texas Hill Country.

Responsibilities

• Pit Program — design and build pits, sourcing, and set the daily cook plan.
• Quality Standards — define bark, smoke ring, render, slicing, and presentation to Texan top standards.
• Menu & Concept — architect brisket/core spine; develop sausage, sides, breads, sauces, and seasonal features.
• Team & Training — hire, train, and mentor pit crew; establish kitchen culture and processes.
• Build-Out — plan smokehouse design, 90-day launch, and cross-property integration with the resort.
