Job summary

Utah Mammoth is seeking a Lead Cook to manage daily food preparation and supervise the culinary team in a fast-paced setting. You will ensure sanitary standards, proper portion sizes, and timely service for all meals, while collaborating with nutrition staff to meet player-specific needs.

The role requires a culinary degree or certification, 3-5+ years of kitchen experience, supervisory experience, and ServSafe certification within 30 days of hire.

Qualifications

  • Culinary Degree or certification.
  • Minimum 3-5+ year of kitchen experience.
  • At least 1 year experience in a supervisory role with culinary training.
  • ServSafe Food Handlers permit, within 30 days of hire.
  • Highly adaptable, with excellent interpersonal skills to work effectively in a diverse environment.
  • Computer literacy, including Microsoft Word, Excel, Powerpoint, and Google Workspace.
  • Superior time management skills, multitasking skills, and the ability to prioritize tasks with minimal supervision.
  • Strong problem identification and problem resolution skills.
  • Ability to work flexible hours to accommodate team needs, will require evenings, weekend, and holiday work schedules as needed.
  • Must possess a valid Utah driver’s license.
  • Must be able to pass a Motor Vehicle Report (MVR) screening in accordance with company policy and insurance requirements.

Responsibilities

  • Oversee daily preparation of food items for all meals in collaboration with the nutrition team.
  • Lead culinary team on meal executions, kitchen organization, and day-to-day training.
  • Follow recipes and presentation specs; manage inventory for daily/weekly needs.
  • Assist with recipe/menu development and evaluate new items for quality.
  • Restock and organize items daily; maintain clean, sanitary workstations and kitchen.
  • Prepare dishes for players/coaches with dietary restrictions.
  • Ensure food safety and proper sanitation; monitor temperatures and storage.
  • Work at efficient pace to meet daily meal needs.
  • Support day-to-day management of line cooks, prep cooks, and dishwashers.
