Location: We are seeking an experienced Executive Chef for the University of Cincinnati Athletics located in Cincinnati, OH.

Principle Function:

The Performance Executive Chef will lead all culinary operations supporting the nutritional needs of The University of Cincinnati student-athletes at The Training Table (student athlete dining center). This high role is responsible for menu development, food preparation, execution, and the overall dining experience within the athletic performance dining facility. The Performance Executive Chef will work closely with UC Athletics Performance Dietitians to ensure meals align with performance-based nutrition goals and NCAA compliance. The individual in this role will foster a culture of culinary excellence, operational efficiency, and commitment to athlete well-being.

Essential Responsibilities:

  • Lead all back-of-house operations within the Training Table facility, including food preparation, service, sanitation, and culinary team oversight.
  • Collaborate closely with UC Athletics Performance Dietitians on menu planning, recipe development, and ingredient selection to meet sport-specific fueling needs.
  • Maintain a dynamic, performance-focused culinary program that supports recovery, endurance, and overall student-athlete wellness.
  • Direct daily meal production with a focus on nutrient timing, food quality, flavor, and presentation.
  • Implement seasonal and rotating menus to provide variety while maintaining performance goals and dietary restrictions.
  • Uphold food safety standards and sanitation practices in compliance with ServSafe, HACCP, Sodexo Live!, and University regulations.
  • Recruit, hire, train, and supervise culinary staff, including line cooks, prep staff, and student workers.
  • Manage food procurement, inventory control, vendor relations, and budget tracking for the Training Table operation.
  • Maintain all kitchen equipment and monitor for maintenance needs to ensure safe and efficient operations.
  • Work collaboratively with the broader campus dining team to integrate student-athlete needs into system-wide planning and events.
  • Provide culinary support for occasional catered team events, pregame meals, or special requests made by Athletics staff.

Qualifications:

  • Minimum 3 years' experience in a high-volume or institutional food service setting; collegiate athletics or sports performance dining strongly preferred.
  • Culinary degree or equivalent certification from a recognized culinary arts institution.
  • ServSafe Food Protection Manager Certification (or willingness to obtain within 30 days of hire).
  • Proven knowledge of nutrition-focused culinary practices, including macronutrient balance and allergen management.
  • Ability to manage multiple priorities and shift focus to meet dynamic performance needs.
  • Familiarity with NCAA nutrition compliance standards is highly desirable.
  • Effective leadership, team-building, and communication skills.
  • Strong organizational skills and attention to detail in a fast-paced environment.

Other Requirements:

  • Able to work effectively and safely while subject to wet floors, temperature extremes and excessive noise; must be able to lift up to 50 pounds in weight; must be able to maneuver in an often tightly-quartered environment.

Hours may be extended or irregular to include nights, weekends and holidays.
