Job summary

The Arizona Biltmore, a Pyramid Global Hospitality property in Phoenix, seeks a Pastry Junior Sous Chef to lead day-to-day pastry and bake shop production under the Pastry Sous Chef. Must be available to work from 2pm - 10:30pm.

This role supports menu development for banquets and outlets, supervises Baker/Pastry Cooks I-III, and ensures quality, sanitation and safety in a high-volume hotel kitchen.

Qualifications

• High school diploma or GED required; accredited culinary school or apprenticeship preferred.
• Minimum 3 years in a pastry department in a hotel.
• Experience supervising pastry cooks and bakery operations is a plus.

Responsibilities

• Maintain professional attitude and appearance; wear proper uniform.
• Follow food handlers’ guidelines and safety procedures.
• Prepare items listed on the production sheet and stock rotation.
• Rotate old stock out first; date and label items for freezer/walk-in.
• Supervise Baker / Pastry Cooks I, II and III in production and sanitation.
• Assist in development of bread and dessert menus for F&B outlets and banquets.
• Prepare material and food requisitions as necessary.
• Demonstrate safety awareness and action in emergencies.

Hotel Website, Instagram, FacebookWhat you will have an opportunity to do:The Pastry Junior Sous Chef is responsible for the day-to-day pastry and bake shop production, under the direction of the Pastry Sous Chef.**Must be available to work from 2pm - 10:30pm**ESSENTIAL FUNCTIONSMaintain a professional attitude, demeanor and appearance. Wear proper uniform and footwear at all items.Consult your supervisor if you are unsure of tasks and procedures.Store all items in approved containers that are wrapped, dated and labeled. Follow food handlers’ guidelines.Sign in and out on the authorized form. Have your supervisor initial it before leaving.Clean all small equipment such as mixers, buffalo choppers, etc., yourself immediately after using them. Supervise staff to ensure consistent adherence to this policy.Prepare items listed on production sheet.Rotate old stock out first. Ask chef if freshness is questionable.Date and label all items going into freezer and walk-in, clean as you go.Supervise Baker / Pastry Cooks I, II and III in production, sanitation and adherence to company procedures.Participate in the development of bread and dessert menus for food & beverage outlets and banquets.Produce material and food requisitions as necessary.Demonstrate commitment to making a conscientious effort to eliminate or reduce the risk of injury to our guests and associates, damage to our property or the property of others.
