PASTRY COOK
Status: Seasonal, Full-time, Non-Exempt

- Advanced Cooking and Food Preparation – Weighing, measuring, knife skills, peeling, grating, tenderizing, marinating, sauté, grilling, roasting, baking, preparing ingredients and equipment, setting time and temperature, food safety, food presentation, judging and modifying sensory properties, knowledge of menu components.
- Excellent Teamwork and Communication Skills – Interact, work and relate with people, listen, speak, read, write, observe, use English fluently.
- Advanced Customer Service Skills – Product knowledge, problem-solving skills, time management, attentiveness, patience, positive attitude, a willingness to go the extra mile, responsibility, professionalism.
- Advanced Safety Skills – Observe safety rules, safely operate equipment, food safety consciousness, CPR and First Aid.
- Experience - At least 6 months of culinary experience in a fine-dining or high-volume environment at a high-end restaurant, resort, or private club required.

Work Conditions
Level 4 – Working in a hot environment (often exceeding 85 degrees), variable schedule based on business demands, often duties require working with hazards.
Duties
- Is responsible for preparing desserts and bakery items.
- Work with the Club team to create the Wianno experience for members. Handle member requests personally and/or refer as appropriate. Demonstrate Club values when providing service and teamwork.
- Cook variety of pastry foods in all modern and classical cooking techniques. Prepare in a timely fashion and properly garnish all food orders in accordance with menu specifications.
- Present food using proper plate presentation techniques.
- Work closely with standard recipes and plate/buffet presentation in order to maintain standards of quality in production and presentation.
- Coordinate completion of menu items with server.
- Set up for meal periods by ensuring that stations are set up based upon anticipated volumes.
- Adhere to Club standards for safe food handling and storage.
- Ensure a clean, neat and organized work area.
- Keep equipment clean and in proper operating condition.
- Maintain cleanliness and stock coolers and storage areas.
- Complete food requisitions to maintain inventory items.
- Operate all kitchen equipment safely and properly in the kitchen.
- Utilize the computer system to read all orders.
- Respect and accommodate servers’ requests regarding guests’ personal preferences and requests.
- Maintain a good working relationship with other employees, providing instruction and encouragement as needed.
- Report and handle any accident immediately, no matter how minor.
- Respond properly in any Club emergency or safety situation based on Club policies and training procedures.
- Follow proper uniform procedures.
- Perform other tasks or projects as assigned by Club management and staff.
