The WREN Story

Role Overview

The Pastry Chef collaborates with Executive Chef Yo Matsuzaki to ensure effective culinary operations, oversees pastry production across hotel outlets, and manages staff to achieve financial, guest satisfaction, and team relations goals.

Essential Duties & Responsibilities
  1. Supervise pastry personnel, providing guidance, counseling, and training.
  2. Develop dessert menus, ensuring consistency in preparation and presentation.
  3. Oversee pastry production for all outlets.
  4. Maintain compliance with health and safety regulations.
  5. Ensure proper equipment maintenance and safety.
  6. Coordinate with the Executive Chef on operational matters.
  7. Inspect cleanliness and condition of tools and equipment.
  8. Manage production schedules and inventory levels.
  9. Prepare menu items following recipes and standards.
  10. Report shortages and communicate menu specials to staff.
  11. Adhere to proper storage procedures and control waste for cost management.
Qualifications
  • High School diploma or equivalent; culinary training or apprenticeship preferred.
  • Sanitation and Hygiene Certificate required.
  • Serve Safe Certification required or obtainable.
  • 3-5 years of experience as a Pastry Chef in a luxury environment.
  • Leadership skills in managing kitchen staff.
  • Proficiency in English; second language is a plus.
  • Strong mathematical, reasoning, and computer skills.
  • Physical ability to lift up to 50 pounds and stand for extended periods.
