Job Description

The Pantry Cook position is responsible for preparing food for patients, cooks, cafeteria, and hospital staff. The role includes cleaning work areas related to food preparation and service. This position supports food service production at the Alaska Psychiatric Institute (API) in Anchorage, AK.

Responsibilities
  • Prepare food according to par level sheets, Nutritional Services, and Health Department standards.
  • Follow standardized recipes to meet nutritional needs.
  • Adhere to preparation sheets, build cards, or recipes.
  • Maintain all portion control standards.
  • Prepare cold food items such as salads, cut fruits, sandwiches, and cold desserts.
  • Prepare patient snacks following the menu cycle.
  • Assist in working the patient tray line to plate food for delivery to units.
  • Set up and break down the patient tray line and steam tables.
  • Follow dietary restrictions and patient menu selections when serving.
  • Maintain FIFO during meal preparation.
  • Operate steam tables, dish machines, trash carts, and knives as needed.
  • Assist with serving patients in the cafeteria if required.
  • Follow all sanitation regulations set by Federal, State, and local authorities.
  • This position does not involve supervising staff.
  • Perform other relevant duties to support the department or unit’s success as assigned.
Qualifications
  • High School Diploma or GED equivalent.
  • Alaska Food Workers Card or ServSafe Certification within 30 days of hire.
  • At least six (6) months of food service experience.
  • Ability to work independently and complete tasks promptly.
  • Knowledge of NMS and HACCP standards.
  • Must pass a fingerprint background check complying with The Crime Control Act, Child Care Worker Act, and the Indian Child Protection and Family Violence Prevention Act.
  • Proficiency in speaking, understanding, reading, and writing English is required.
Preferred Qualifications
  • One (1) year of experience in a hospital or school cafeteria setting.
  • One (1) year of experience with food production equipment.

Working Conditions and Physical Requirements

Work environment: Indoors in an environmentally controlled hospital kitchen setting.

Noise level: Moderate.

Physical requirements: Ability to lift/move up to 50 lbs., and frequently sit, stand, walk, handle objects, climb, stoop, kneel, crouch, crawl, talk, hear, see, taste, and smell.

Travel: None.
