Job summary

Head Artisan Bread Baker / Boulanger in Charlotte, NC is sought to lead bread production at a wholesale facility. The role requires hands-on leadership, expertise in sourdough and traditional French breads, and overnight availability. You will manage schedules, quality, and inventory while mentoring a bakery team and ensuring top craftsmanship.

The position offers a base salary of $80,000–$90,000 with health insurance and PTO as part of the compensation package.

Qualifications

• Professional artisan bread baking experience required.
• Strong experience with sourdough, naturally leavened breads, baguettes, and traditional French bread production.
• Extensive knowledge of dough mixing, fermentation, shaping, proofing, and baking.
• Experience maintaining sourdough starters, levain, and preferments.
• Experience with high-volume commercial or wholesale bread production.
• Ability to develop and execute bread formulas and maintain consistent product quality.
• Experience with commercial bakery equipment, including mixers and deck ovens.
• Lead daily bread production, scheduling, and quality control.
• Train and develop bakery team members.
• Manage production timelines, ingredient inventory, and waste control.
• Maintain food safety, sanitation, and bakery standards.
• Strong organizational skills, attention to detail, and commitment to craftsmanship.
• Must be available to work overnight shifts.
