We’re excited to hire and welcome team members to our national park locations! Xanterra Travel Collection is a private company that provides concession services within national parks. All services operated by Xanterra, including lodging, dining, retail, and tour operations, are currently open and continue to operate as planned for the 2025 summer season. Any potential government layoffs within the National Park Service donot impact our positions or job offers.

The Details:
Position Type: Seasonal
Season Dates: Late May - Early September
Pay: $17.50/hour - $18.50/hour

Schedule: Typical schedule is 40 hours, 5 days per week (may include weekends, evenings, and holidays)

Join us at the historic Roosevelt Lodge Dining Room or the unforgettable Roosevelt Cookout, where you'll bring the flavors of the Old West to life. As an Old Western Style Cook, you'll be responsible for preparing hearty American fare that delights our guests and transports them back in time.

Roosevelt Lodge Dining Room: Nestled inside the rustic Roosevelt Lodge, this dining room is a tribute to the Old West. Here, you'll craft delicious meals in a charming lodge setting, featuring our famous Roosie Baked Beans. Guests can enjoy their meals by the cozy fireplace or on the rocking chair-lined porch, soaking in the ambiance of a bygone era.

Roosevelt Cookout: Howdy, partner! At the Roosevelt Cookout, you'll create an authentic cowboy cooking experience in the serene natural beauty of Pleasant Valley. Guests will travel to Yancy’s Hole by horseback, covered wagon, or stagecoach, where they'll be greeted by the mouthwatering aroma of hearty beef steaks, our renowned Roosie Baked Beans, and an array of other delectable dishes.

Responsibilities

  • Responsible for preparation, set-up, service, clean up, and restocking of cooks line and appropriate prep areas.
  • Responsible for prep, set-up, service, clean up, and restocking of cooks line and appropriate prep areas.
  • Expected to adhere to all sanitation requirements including product rotation, temperature maintenance and record keeping, storage procedures, cooking requirements, and handling techniques.
  • Job duties of the position vary by location and function. Placement will be in one of the following areas - ala carte operation, employee dining operation or a quick service operation.

Qualifications

  • 2 years experience in a cook position needed for senior level cook position
  • 6 months to 1 year cook experience needed for quick service cook position
  • Perform all duties toward the goal of providing excellent guest service in an efficient manner.
  • Follow all policy, procedures and service standards.
  • Responsible for prep, set-up, service, clean up, and restocking of cooks line and appropriate prep areas.
  • Adhere to all sanitation requirements including product rotation, temperature maintenance and record keeping, storage procedures, cooking requirements, and handling techniques.
  • Ability to work from prep and par lists and follow standardized recipes. Commit food specifications to memory.
  • Develop and maintain positive communication and teamwork with all co-workers and supervisors.
  • Work quickly, efficiently, and safely with all kitchen equipment.
  • Organize and prioritize under pressure while maintaining a pleasant demeanor.

Physical Requirements include:

  • Must be able to stand for long periods of time, approximately 8 hours.
  • Must be able to walk for long periods of time.
  • Must be able to lift and carry a minimum of 50 pounds.
  • Must be able to bend, stretch and reach for extended periods of time.
