Job summary

Vertice Hospitality seeks a Non-Alcoholic Beverage Specialist to lead a seasonally driven beverage program using farm-sourced ingredients and repurposed byproducts.   • Minimum 3+ years of related food, beverage and/or service management experience in a fine dining atmosphere.
  • Experience or interest in fermentation, preservation, or zero-waste practices strongly preferred.
  • Strong communication skills in English (written and verbal).
  • Deep curiosity and passion for sustainable, ingredient-driven beverage creation.
  • Strong organizational skills with the ability to execute under pressure.

Responsibilities

  • Design and execute a seasonal non-alcoholic beverage program utilizing farm-grown ingredients.
  • Creatively repurpose culinary byproducts (peels, stems, trims, ferments, etc.) into high-quality beverages.
  • Develop thoughtful non-alcoholic pairings that complement the evolving menu.
  • Create seasonal welcome beverages that reflect current harvests.
  • Ensure all beverages align with quality standards and receive management approval.
  • Maintain and evolve coffee and tea offerings with a focus on quality, sourcing, and craftsmanship.
  • Integrate farm elements and house-made components into coffee and tea service where appropriate.
  • Prepare all beverages with precision, consistency, and efficiency during service.
  • Maintain a clean, organized, and well-stocked workstation.
  • Collaborate closely with the expeditor and service team to ensure proper pacing and seamless guest experience.
  • Support service needs, including glass polishing and station upkeep during downtime.
  • Champion a low-waste, high-creativity approach to beverage development.
  • Continuously explore new techniques (fermentation, infusions, preservation) to extend the life of farm products.
  • Contribute to a culture of continuous improvement and environmental responsibility.
  • Work a flexible schedule, including evenings, holidays, and extended hours as needed.
  • Comply with all health, safety, and labor regulations.
  • Perform additional duties as assigned.

Position Summary

Under the direction of the General Manager, the Non-Alcoholic Beverage Specialist leads the creation of a seasonally driven beverage program rooted in ingredients sourced directly from the farm and thoughtfully repurposed culinary byproducts. This role transforms fresh harvests and kitchen waste into innovative, zero-proof beverages that reflect the restaurant’s commitment to sustainability, creativity, and a deeply connected dining experience.

In addition to overseeing the coffee and tea programs, the Specialist is an active presence in service, crafting beverages that are as intentional and expressive as the cuisine they accompany.

Essential Job Functions
Farm-Driven Beverage Development
  • Design and execute a seasonal non-alcoholic beverage program utilizing farm-grown ingredients
  • Creatively repurpose culinary byproducts (peels, stems, trims, ferments, etc.) into high-quality beverages
  • Develop thoughtful non-alcoholic pairings that complement the evolving menu
  • Create seasonal welcome beverages that reflect current harvests
  • Ensure all beverages align with quality standards and receive management approval
Coffee & Tea Program

Environmental And/Or Physical Requirements
  • Ability to perform the essential job functions consistently, safely and successfully with federal, state, and local standards
  • Must be able to lift and carry up to 40 pounds
  • Ability to stand for prolonged periods of time
  • Ability to physically maneuver through work areas; bend, lift, carry, reach/extend arms, and hands above shoulder height frequently, climb stairs and steps, or otherwise move in a constantly changing environment
