Job summary

King’s Hawaiian is seeking an Operator in Torrance, CA to perform routine dough mixing and processing tasks in a fast-paced bakery environment. You will operate and monitor AZO and ISMAR systems, track ingredient flows, and ensure safety and quality standards.

Responsibilities include inspecting equipment, recording mixing data, assisting in training, and maintaining sanitation and GMP compliance in line with FSQS procedures.

Operation of mixing equipment, ingredient scaling equipment and systems. Preparation and mixing a variety of King’s Hawaiian dough recipes using standardized processes in accordance with food safety practices. Work will consist of routine tasks requiring identification of problems, troubleshooting and everyday decision-making.Operate and monitor AZO and ISMAR systems.Monitor control panel, observe lights and dials to verify that panel and equipment is functioning. Listen for malfunction alarms, and shut down equipment and notify foreman and supervisors.Inspect mixing equipment such as; mixing tools, conveyors, fat feeder, liquids, and Techweigh blender to verify that equipment is operational.Monitor ingredient micro/minor AZO transfer system and componenter to make sure that there is a constant flow of ingredients to the blenders.Monitor dough pumps levels to obtain desired dough consistency. Assemble dough pumps as needed to set up per SKU.Monitor dough coming out of mixer making sure it meets desired specifications, i.e. consistency and temperature.Monitor fermentation tank to maintain at level per SKU.Transfer butter for batch using O2 mobile/MAS500 scanning systems.Transport butter into and out of the tempering room using FIFO method.Load butter into the fat feeders.Use bar code scanner to record the correct lot numbers for the butter.Transport rework dough to the mixing area and add re-work dough to the dough pump at the appropriate rate.Use rework dough using the appropriate WIP Rework Procedures FSQS 4.6 and WIP Dough Tracking Sheet FSQS 4.6.1.Scale hand-add ingredients manually into buckets. Add the hand add ingredients to the blender or componetors when needed.Record mixing information, i.e. lot codes, amounts, start times and temperatures on mixing logs in the computer/ iPad.Proper communication of issues to co-workers or the proper department(s) (ie. Sanitation, Maintenance, or Quality Assurance) as needed through use of radio.Maintain the proper Quality Assurance paperwork.Assist in training of new employees or employees who change job classifications.Maintain a high level of sanitation and GMP’s as per our FSQS – Food Safety and Quality SOP Manuals.Complete tasks and projects as required by the company.Promote safety in the work area by understanding and complying with safety procedures and reporting all accidents in a timely manner.Promote our company values of “Dignity, Excellence, and Telling it like it is in a way that can be heard” through your actions and by educating the staff about our values.The responsibilities associated with this job will change from time to time in accordance with the Company’s business needs.
