Role Overview: The Meat Cutter's performance significantly impacts the guest's dining experience by ensuring quality and efficiency in meat preparation. Top-quality meat cutting helps optimize profit and provides guests with full value in product and service.

Responsibilities:

1. Food Production:

• Cut meat according to product specifications and time standards.
• Follow the buffet production system to ensure quality and shelf life compliance.
• Rotate cut and boxed meat to maintain freshness.
• Stock and arrange the Meat Cooler following approved food safety guidelines.

Cleanliness:

• Sanitize all surfaces between chicken and other meats to prevent cross-contamination.
• Recognize signs of spoiled meat (sticky, slick, bad smell).
• Clean and sanitize the meat room according to standards.
• Follow local health department laws.

Operational Excellence:

• Maintain inventory using administrative forms and determine production levels.
• Report discrepancies in product or equipment to the manager.
• Perform opening and closing administrative procedures.
• Maintain equipment per the maintenance manual.
• Complete duty roster tasks.
