Position Purpose:

Portion, cut, slice, and package meats/seafood to specific sizes and weights according to work order specifications and customer preferences. Ensure tools are cleaned and sanitized, safety, GMP, and quality standards are met, and maintain efficient product flow. Collaborate as a team member and perform duties to serve the company's needs.

Responsibilities may include, but are not limited to:
  • Review work schedule, perform safety checks, prepare supplies, and secure equipment after shifts.
  • Check cutting list, obtain stock, and handle waste properly.
  • Cut raw meat/seafood by hand with knives, using proper techniques.
  • Sanitize knives and tools, adhere to USDA regulations.
  • Use band saw or slicer for portions, check weights, and package appropriately.
  • Manage scrap removal and assist other team members as needed.
  • Maintain cleanliness and safety standards in the work area.
  • Perform other duties as assigned.
Qualifications:

High School Diploma/GED or equivalent. 0-6 months experience in meat/seafood cutting or related area.
