Job summary

Discovery Land Company Maui is seeking a Sous Chef for Makena Golf & Beach Club on Maui. You will supervise all kitchen prep, train staff, and work with the Executive Chef to refine menus and ensure top-tier service for members.

The role requires leadership, strong knowledge of cookery techniques, and the ability to manage costs while upholding food safety standards. Competitive pay and growth opportunities are offered.

Qualifications

• Culinary degree or pedigree required.
• 5+ years of culinary experience in large world class resort, hotels and clubs.
• Leadership experience in high end restaurant, resort, or private club preferred.
• Knowledge of cookery techniques and processes for local and imported foods.
• Experience sourcing local ingredients and creating seasonal menu items.

Responsibilities

• Supervise and manage all food preparation and kitchen organization.
• Train and develop culinary staff with the Executive Chef.
• Assist with menu creation, development, and pricing guidance.
• Schedule kitchen staff and control labor costs.
• Ensure HACCP and local food safety compliance.
• Maintain food quality, portion control, and consistency across dishes.
• Coordinate with Stewarding to keep kitchen areas clean and safe.
