Hotel Wailea, a Relais & Châteaux luxury resort on Maui, seeks a skilled Sous Chef to lead and elevate our dining program. You will collaborate with the Chef de Cuisine on menu development, oversee kitchen operations across two venues, and ensure superb guest experiences through exceptional plating, flavor, and restaurant service.

The ideal candidate brings strong culinary skills, leadership, and a passion for hospitality.

Qualifications

• Proven experience as a Sous Chef or in a similar role.
• Experience with kitchen safety practices and sanitation.
• Ability to manage multiple tasks and staff in a high-end kitchen.

Responsibilities

• Prepare high-quality meals following standards and production schedules.
• Collaborate with Chef de Cuisine on menu development and event support.
• Delegate line management and supervise daily production across kitchens.
• Ensure ingredients and equipment meet quality and cost controls.
• Maintain kitchen organization, cleanliness, and inventory records.
• Train and mentor junior kitchen staff; uphold grooming and hygiene standards.
• Monitor labor and food costs to achieve budget targets.
