Job description

POSITION FOCUS

To ensure proper service from the front line through quality control, training of line cooks, and maintaining proper sanitation levels.

ESSENTIAL RESPONSIBILITIES

  1. Check all items against recipe cards, verify use records, and ensure food is presented efficiently and with quality.
  2. Monitor the line setup before all meal functions to ensure maximum efficiency.
  3. Ensure equipment maintenance and adherence to the 'clean as you go' policy.
  4. Prepare food of consistent quality following recipe cards, production, and portion standards, with dupe from servers.
  5. Start food items prepared ahead of time, avoiding over-preparation.
  6. Label and rotate all food containers as per SOP, maintaining proper temperatures for perishables.
  7. Check pars for shift use, determine preparations needed, and set up lines accordingly.
  8. Note any out-of-stock items or shortages.
  9. Assist in keeping the buffet stocked.
  10. Return unused food items to storage, covering and dating perishables.
  11. Assist in planning and implementing actions to control food costs, waste, and usage per SOP.

  • Perform other duties as assigned by management.

POSITION QUALIFICATIONS

Education/Formal Training

High school diploma or equivalent.

Experience

One to two years of related experience in a similar role.

Knowledge/Skills

  • Knowledge of cooking practices and kitchen procedures for analytical work.

Physical Demands

  • Ability to lift, push, pull, and carry items up to 70 lbs, including food cases and equipment.
  • Periodic climbing and bending required.
  • Full mobility and ability to travel 30-50 feet regularly.
  • Continuous standing during preparation, service, or expediting.
  • Ability to hear timers and communicate effectively with staff.
  • Good visual acuity to monitor food preparation.
  • Ability to understand and follow verbal and written instructions.

Environment

Work primarily indoors (95%), with temperatures ranging from -10°F in freezers to over 100°F on the front line.
