Position Summary:

The Line Cook is expected to prepare nutritious, appetizing, and attractive meals; work as a team member with other employees to assure efficient and safe operation of the kitchen and the dining room; receive food and beverage orders, prepare and serve food and beverages, serve, and restock items in bistro; clear and clean tables and chairs, counters, display case(s); and provide exceptional quality food and service to all residents, guests and coworkers by performing essential duties effectively and efficiently.

Essential Duties and Responsibilities:
  • Maintain resident, employee, and community information in strict confidence (with community management or other employees as necessary).
  • Carry trays and supplies.
  • Inspect food preparation and serving areas to ensure observance of safe, sanitary food handling practices.
  • Wash, peel, cut, and seed fruits and vegetables to prepare them for consumption.
  • Bake, roast, broil and steam meats, fish, vegetables and other foods.
  • Regulate temperatures of ovens, broilers, grills and roasters.
  • Weigh, measure and mix ingredients according to standard recipes using various kitchen utensils and equipment.
  • Portions arrange and garnish food in timely manner.
  • Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling or piercing them with utensils.
  • Uphold the standards and expectations of food quality and production set forth by Brightwater.
  • Perform scheduled cleaning, stocking, and rotation and maintenance tasks set by Chef.
  • Attend scheduled training seminars and staff meetings.
  • Review menus and Daily Food Production Record for instructions.
  • Prepare meals that are nutritious, appetizing, and attractive according to Brightwater menus and recipes as well as to physician orders for diet, diet texture, and liquid thickness.
  • Keeps immediate supervisor promptly and fully informed of all problems or unusual matters of significance and takes prompt corrective action where necessary or suggests alternative courses of action which may be taken.
Requirements
  • Have two years of experience in institutional or full-service restaurant cooking
  • Ability to prepare varying quantities of set recipes by converting common measurements and equivalents using addition, subtraction, division and multiplication
  • Ability to arrange things or actions in a certain order or pattern according to a specific rule or set of rules (e.g. patterns of numbers, letters, words, mathematical operations.
  • Demonstrate ability to communicate effectively, both verbally and in writing.
  • Meet state or provincial health related requirements.
  • Maintain Food Handlers permit as required by state or provincial regulations.
  • Maintain any certifications as required by state or provincial regulations.
