Job summary

Club One Casino in Fresno, CA is seeking a full-time line cook to prepare all Club One Casino food items, including Asian and American lines, and to execute daily specials according to the recipe book. You will restock, maintain clean stations, and communicate with Shift Lead about supplies and equipment, while following health and safety guidelines.

Ideal candidates will be fluent in English, with 2 years cooking or kitchen experience and a California Food Handler Card.

Qualifications

Responsibilities

• Prepare and portion items according to recipe book.
• Attend to orders promptly to ensure timely service.
• Restock and organize stations; rotate stock to par levels.
• Maintain sanitized work area and report low supplies.
• Assist with daily specials and line checks.
• Follow hygiene standards and safety policies.

Job description

Job Summary:

• Ensure that every food dish is prepared and served with quality ingredients, consistent with the recipe book.
• Attend to orders promptly to make sure that food comes out in a timely manner.
• Responsible for the preparation of any Club One Casino food item (Asian and American line).
• Execute daily specials in accordance to the recipe book.
• Restock freezers, counter-tops and lower refrigerator drawers.
• Maintain an organized and sanitized work area at all times.
• Communicate with Shift Lead when product/supplies are running low.
• Complete continuing education or training as directed by management.
• Any and all other reasonable duties that may be assigned in the future.

Daily routine to include:

• Be on time for your shift and properly dressed.
• Replace the sanitizer bucket at the beginning of your shift. Check and change the sanitizer bucket frequently.
• Check with your Shift Lead for any special events and special tasks.
• Confirm that all refrigerator units are working properly @ 40 degrees or below.
• Ensure that all equipment is working properly. Notify Facilities Manager and Kitchen Manager of faulty equipment.
• Make sure all containers are properly stored, rotated and stocked to par levels.
• Ensure that all portioned items are weighed to specs. Never use an item that is not properly portioned.
• Prepare items on the prep list.
• Make sure the line is ready for a line check. If not ready, notify your Shift Lead for assistance.

At end of shift:

• Restock and rotate all containers – FIFO (first in, first out).
• Clean and sanitize your station.
• Wash all cutting boards.
• Break down sauté burners and send to dishwasher.
• Clean deep fryers daily and change the oil every Sunday, Wednesday and Friday.

Essential Job Skills:

• Fluency in English. Second language skills a plus.
• Ability to cook all forms of appetizers, entrées, desserts and other menu items.
• Knowledge of kitchen health and safety practices.
• Ability to work standing in a confined space for extended periods of time.
• Ability to lift 20 pounds.
• Ability to interact professionally with all Club One Casino staff.

Minimum Requirements:

• Must be at least 21 years of age.
• Card Room work permit.
• High school diploma or equivalent.
• 2 years cooking or kitchen experience.
• California Food Handler Card.
