Job summary

CÉ LA VI Miami is seeking a Head Sushi Chef to help launch our first U.S. location. This full-time role requires exceptional knife skills, fish fabrication, and fine dining experience as you design and refine a standout sushi program with the Executive Chef during pre-opening.

You will test dishes, perfect techniques, source ingredients, and set the standard for excellence as the brand extends globally with Southeast Asian-inspired flavors and a vibrant, living-life-to-the-fullest environment.

Qualifications

• Exceptional knife skills and fish fabrication required.
• Experience preparing Nigiri and Maki in fine dining.
• Proven track record in high-end kitchens.
• Strong dedication and Shokunin approach.
• Collaborative mindset preferred.

Responsibilities

• Design and refine a standout sushi menu during pre-opening as part of a contract team.
• Test dishes, perfect techniques, and source quality ingredients.
• Help launch the sushi program and ensure launch-ready operations.
• Partner with Executive Chef during pre-opening phase.
