Qualifications

Job Description

The Cook II role reflects the mission, vision, and values of NM, adhering to our Code of Ethics, Corporate Compliance Program, and all relevant policies and standards.

  • Support the Food and Nutrition Team by preparing hot food and meal items safely and hygienically.
  • This is a casual position with no guaranteed hours or benefits.
  • Must be able to work a rotating schedule starting at 5 am, 11 am, or 2 pm, including every other weekend.

Responsibilities
  • Measure, mix, and prepare ingredients according to recipes.
  • Use kitchen equipment properly, including blenders, mixers, grinders, slicers, ovens, steamers, etc.
  • Demonstrate knife skills such as chopping, slicing, dicing, and paring.
  • Prepare and present menu items for café, patients, and catering according to standards.
  • Prepare sauces, soups, stews, casseroles, and desserts following dietary guidelines.
  • Cook meats, fish, and poultry safely using various methods, and carve into servings as per recipes or diet orders.
  • Monitor and record temperatures of steam tables and hot-held items during service.
  • Test food for doneness, adjust heat as needed, and ensure proper temperatures are maintained.
  • Produce flavorful, attractively presented food.
  • Make ingredient or seasoning changes only when directed by a chef or culinary leader.
  • Maintain product levels and appearance at service stations.
  • Consult with managers about leftovers handling.
  • Follow infection control and HACCP practices at all times.
  • Complete daily temperature logs and production sheets accurately, assisting supervisors with corrections.
  • Keep the kitchen/station safe and organized.
  • Manage work schedule efficiently to complete tasks on time.
  • Monitor cooking equipment and communicate repairs to management.
  • Perform other duties as assigned by supervisors or managers.
Qualifications

Required:

  • High School diploma or equivalent, or at least 1 year relevant experience in cooking, production, or food service if no diploma.
  • Successful completion of Safe Food Handler certification within 1 year of hire.

Preferred:

  • Previous healthcare cooking experience.
  • Completion of culinary schooling.
  • Basic knowledge of special diets.
