Qualifications

• Able to operate saws safely and visually gauge portion weights.
• Portioning operator responsible for a single meat cutter on the line.
• Merchandise subprimal, program machines to maximize value and meet customer specs, basic troubleshooting, lead team when applicable.
• Read tickets and understand special requests; read meat cuts and write numbers/descriptions.
• Perform mathematical functions to ensure accurate weight and size; knowledge of products.
• Basic computer capabilities.

Responsibilities

• Lead the cut machine crew and keep machines running efficiently.
• Prioritize product order to meet demands.
• Set machines up per product to ensure proper program and maximize yields.
• Adjust weight and thickness parameters as needed.
• Read work orders and inform staff on next items and piece counts.
• Operate saws and portion subprimals into steaks by weight using a band saw.
