Job summary

Olive & Hay, the signature Italian-inspired restaurant at Meritage Resort & Spa in Napa Valley, seeks a Cook I – Lead Line Cook PM to supervise multiple stations, maintain high-quality prep, and mentor junior cooks. You will collaborate with Sous and Executive Chefs to uphold culinary standards and menu execution.

The role requires the ability to manage high-volume service, train teammates, and adapt to daily production needs while maintaining food safety and consistency.

Qualifications

• 3+ years of upscale restaurant, resort, or hotel kitchen experience.
• Experience leading a station independently during high-volume service.
• Strong knowledge of classical cooking techniques, sauces, proteins, and scratch preparation.

Responsibilities

• Execute all kitchen stations (sauté, grill, pizza, pantry, dessert) with high quality and consistency.
• Lead station during service; organize production and communicate with team.
• Train and mentor Cook II/III on techniques, recipes, and plating standards.
• Assist with daily production planning, station assignments, and service execution.
• Ensure mise en place and proper inventory handling, FIFO, and waste reduction.
• Support ordering, production planning, and inventory counts as needed.
