Position Title: Lead Kitchen Utility Cook - Culinary Team

Pay Range: $23/hr - $26/hr, DOE

Event Based Schedule: MLB Season

Join the Culinary team at Chase Field, home of the Arizona Diamondbacks, and be part of an energetic, fast-paced environment where every day brings new opportunities to create exceptional dining experiences. As a Lead Utility Cook, you’ll prepare high-quality meals for a variety of events, contributing to memorable moments for fans and guests.

Responsibilities:
  1. Supervise and guide prep cooks and utility staff, ensuring adherence to recipes, portion control, cooking standards according to specifications and Levy Core Signature standards.
  2. Enforce kitchen safety standards and food safety compliance, including proper food handling, cross-contamination prevention, and maintaining safe food temperatures.
  3. Oversee the preparation of ingredients, ensuring quality standards, and compliance with safety protocols; check food temperature during preparation, cooking, and storage.
  4. Comply with all health, safety, and sanitation regulations; follow established safety standards for food handling, preparation, cooking, and storage.
  5. Perform prep duties, such as chopping vegetables, marinating proteins, and preparing other ingredients according to recipes and production sheets.
  6. Ensure all kitchen equipment and stations are properly cleaned and maintained, following safety procedures and sanitation guidelines. Supervise equipment usage and cleanliness within the kitchen.
  7. Assist with inventory management, ensuring ingredients are stocked; complete production logs and monitor portion control and waste.
  8. Work collaboratively with Culinary team to ensure timely service and efficient operations.
  9. Assist with all event types including catering, department specific products, game day events.
  10. All other duties as assigned.
Qualifications:
  1. Experience in food preparation or culinary arts, large-volume kitchen experience preferred.
  2. 5 years’ experience in a Lead or Supervisory Culinary role preferred.
  3. Strong knowledge of culinary techniques, knife skills, and kitchen operations.
  4. Ability to multitask and work effectively under pressure in a fast-paced environment.
  5. Knowledge of food safety regulations, sanitation practices, and HACCP guidelines.
  6. Ability to follow instructions and work collaboratively in a team environment.
  7. This position may require the following valid certifications; ServSafe Food Certification, Maricopa County approved Food Handler certification.
  8. Flexibility to work evenings, weekends, and holidays as required for stadium events.
Physical Requirements:
  1. Ability to stand and walk for prolonged periods, ascend and descend stairs.
  2. Exposure to heat, steam, and cold temperatures within the kitchen environment.
  3. Ability to lift, push, pull, and carry up to 50 lbs.
  4. Manual dexterity and coordination to perform tasks such as chopping, cutting, and food preparation.
  5. Ability to bend, stoop, and kneel.
