• Operate industrial mixers and monitor mix times, temperatures, and dough development.
• Lead mixing department; assign tasks and train operators; communicate batch times and issues.
• Complete batch sheets and document deviations and corrective actions.
• Maintain sanitation, GMP compliance, and proper equipment cleaning.
